Ingredients
For the simple syrup
2 Plums, pitted and stems removed
1/4 Cup Sugar
1/2 Cup Water
For the sangria
1 Bottle Dry White Wine
3 Plums Sliced
1 Tbsp. Lemon Juice + plus extra slices
1/4 Cup Brandy
Fresh Mint (optional)

Directions
Make simple syrup by combining plums, sugar, and water and then bring to a boil and let simmer of 5 minutes. Turn off heat and let sit for another 5 minutes and then strain the liquid and chill it thoroughly.
Add white wine, 1/4 cup simple syrup, sliced plums, lemon slices, and brandy to a pitcher and stir to combine.
Add ice to a few glasses along with extra fruit and then add the sangria to each glass leaving a little room at the top of each glass.
Top off each glass with sparkling water and then garnish with fresh mint and serve.
