Roasted Salmon with Plum Salsa

Ingredients

For the salmon:
● 4 salmon filets (about 1lb.)
● 1 teaspoon chili powder
● 1 teaspoon salt
● 1 teaspoon garlic powder
● ½ teaspoon black pepper
● 1-2 tablespoons honey – enough to brush over each salmon filet

Plum Salsa:
● 2 ripe plums, diced
● 1 medium jalapeño, finely diced
● 1/4 cup red onion, finely diced
● 1/4 cup cilantro, chopped
● 1 1/2 limes, juiced
● 1 teaspoon cumin
● ½ teaspoon Kosher salt
● ½ teaspoon black pepper

Directions

1. Preheat oven to 400 F. To a small bowl, mix to combine chili powder, salt, garlic powder and pepper.
2. To a baking dish, place salmon filets skin side down. Brush each salmon filet with honey and season with seasoning mix.
3. Bake for 10-12 minutes, until salmon easily flakes with a fork.

While salmon is baking, make salsa: To a bowl, add plums, jalapeño, red onion, jalapeño, lime juice, cumin, salt and pepper. Mix to combine. When salmon is ready, spoon the salsa over the filets and serve immediately – enjoy!
