Roasted Cauliflower Steak with Plum Sauce is a flavorful, plant-based recipe that combines the savory depth of roasted cauliflower with a sweet and tangy plum sauce.
Ingredients
1 whole medium to large cauliflower
4 cups (1 liter) water
1 teaspoon salt
3.5 oz (100g) smoking wood chips
Plum Sauce:
1 lb. 2 oz (500g) red plums, halved, pitted, and roughly chopped
1/2 cup (100g) brown sugar
3/4 cup (200ml) rice vinegar
Juice of 1 lemon
1/2 cup (100ml) water
1 teaspoon five-spice powder
1 tablespoon fresh grated ginger
1 medium onion, chopped
1 teaspoon cayenne pepper
2 1/2 tablespoons (40ml) soy sauce

Directions
Bring 4 cups of salted water to a boil in a large pot, then add the whole cauliflower.
Boil the cauliflower for 20 minutes, then drain and set aside.
To smoke the cauliflower: Place a hot charcoal disk in a small foil container, then add the wood chips. When the chips begin to smoke, place the foil container with the chips on the bottom rack of the oven. Place the cauliflower directly on the top rack, above the smoking chips. Close the oven and allow to smoke for 10–15 minutes.
While the cauliflower smokes, make the plum sauce: Combine all the sauce ingredients in a saucepan. Simmer on medium heat for about 25 minutes. Blend the mixture until smooth.
Preheat your oven to 400°F (200°C).
Place the smoked cauliflower on a baking tray. Baste with half of the plum sauce. Bake for 15 minutes, then baste with the remaining sauce and bake for an additional 10 minutes, or until the cauliflower is nicely browned.
Serve the cauliflower sliced into steaks, topped with extra plum sauce and fresh herbs.
