Ricotta & Plum Stuffed French Toast

Serves 4

Perfectly golden-brown on the outside and soft on the inside, this Ricotta Plum Stuffed French Toast recipe is a decadent, indulgent breakfast or brunch treat that combines the rich, creamy texture of ricotta with the sweet-tart flavor of plums.

Ingredients

  • 4 slices of whole wheat bread (with crusts on)
  • 1 tablespoon powdered sugar (icing sugar)
  • 6 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

The Filling

  • 7 oz fresh ricotta cheese (about 1 cup)
  • Roasted spicy plums (recipe below)

Garnish

  • 1/2 cup toasted almonds
  • Honey, for drizzling
  • Powdered sugar (for dusting)

Spicy Plums

  • 10 plums, pitted and roughly chopped
  • 1/2 cup granulated sugar
  • 1/8 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 tablespoon orange zest
  • 1/2 cup orange juice or apple juice
  • 7 oz (about 1/2 cup) melted butter

Directions

The Filling

  1. Whip the eggs, icing sugar, vanilla extract and team together.
  2. Soak two slices of bread at the same time in the egg mixture.
  3. Spray a frying pan large enough to hold two slices of bread with nonstick cooking spray and heat to medium high.

The Bread

  1. Gently lift the bread out the egg mixture and place it into the pan. Fry on both sides till golden. Remove and keep warm.
  2. Repeat with the remaining two slices of bread.
  3. Place a spoonful of ricotta cheese and a spoonful of the plum mixture down the center of each slice of French toast.
  4. Roll up gently and serve on a warm plate.
  5. Garnish the tops with toasted almonds, honey and a dusting of icing sugar.

The Plums

  1. Place all the ingredients into a bowl and mix together well so that the plums get coated with the other ingredients.
  2. Pile into a medium sized oven proof dish and roast for 15 to 20 minutes or until the plums are not and bubbling.
  3. Remove from the oven and cool till needed.
