Ingredients
6 individual store-bought pastry cases (about 3 inches in diameter)
6 plums, pitted and thinly sliced
5 oz (100g) cream cheese
2 tablespoons Greek yogurt
½ teaspoon vanilla extract
1 teaspoon lemon zest
1 tablespoon caster sugar (or superfine sugar)
1 egg yolk
1 passion fruit
1 tablespoon light muscovado sugar (or light brown sugar)
Fresh mint, for decoration

Directions
Preheat your oven to 350°F (180°C), or 320°F (160°C) for a fan/convection oven. Gas Mark 4.
Place the pastry cases onto a baking sheet. Distribute half of the sliced plums evenly between the pastry cases.
In a bowl, beat together the cream cheese, Greek yogurt, vanilla extract, lemon zest, superfine sugar, and egg yolk until smooth. Spoon the mixture into pastry cases.
Bake for 15 minutes, or until the filling is set and slightly golden.
While the tarts are baking, place the remaining sliced plums in a small saucepan. Cut the passion fruit in half and scoop the flesh into the saucepan. Add light muscovado sugar and 3 tablespoons of water. Simmer gently for 3-4 minutes, until the plums soften, and the mixture thickens slightly. Remove from heat.
Serve the tarts slightly warm, topped with the plum and passion fruit mixture, and decorated with fresh mint leaves.
