Japanese Style Summer Salad with Plums
Serves 4
This Japanese Summer-Style Salad with Plums is a refreshing, vibrant dish for a light, nutritious, and satisfying meal.
Ingredients
Salad Ingredients
6 large firm ripe plums, peeled, pitted, and cubed
7 oz butter lettuce (about 1 small head)
1 cup cubed English cucumber (about 1/2 medium cucumber)
14 oz cooked prawn meat (shrimp)
1 cup bean sprouts
2 spring onions (green onions) with tops, sliced
1/2 red bell pepper, diced
2 tablespoons chopped fresh coriander (cilantro)
Spicy Plum and Chilli dressing
1/2 cup (125 ml) olive oil
2 red chillies, sliced
3 tablespoons lime juice (about 1 lime)
1 tablespoon chopped fresh mint
1 teaspoon lime zest (from 1 lime)
2 cloves garlic, crushed
1 tablespoon fish sauce
1 teaspoon sesame oil
1 tablespoon brown sugar
1 tablespoon honey
Flesh of two ripe plums, blended (about 1 cup)
2 tablespoons ready-made Japanese mayonnaise

Directions
Layer the salad ingredients on a serving platter, moistening each of the layers with the chili dressing as you go.
Serve immediately.
