Japanese Style Summer Salad with Plums

This Japanese Summer-Style Salad with Plums is a refreshing, vibrant dish for a light, nutritious, and satisfying meal.

Ingredients

Salad Ingredients

  • 6 large firm ripe plums, peeled, pitted, and cubed
  • 7 oz butter lettuce (about 1 small head)
  • 1 cup cubed English cucumber (about 1/2 medium cucumber)
  • 14 oz cooked prawn meat (shrimp)
  • 1 cup bean sprouts
  • 2 spring onions (green onions) with tops, sliced
  • 1/2 red bell pepper, diced
  • 2 tablespoons chopped fresh coriander (cilantro)

Spicy Plum and Chilli dressing

  • 1/2 cup (125 ml) olive oil
  • 2 red chillies, sliced
  • 3 tablespoons lime juice (about 1 lime)
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lime zest (from 1 lime)
  • 2 cloves garlic, crushed
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • Flesh of two ripe plums, blended (about 1 cup)
  • 2 tablespoons ready-made Japanese mayonnaise

  1. Layer the salad ingredients on a serving platter, moistening each of the layers with the chili dressing as you go.
