Make the glaze by combining chopped plums (pits and stems removed), ginger, garlic, brown sugar, salt, and soy sauce into a saucepan and bring to a simmer. Cook until plums have softened, and sauce has thickened, about 10-15 min.
Add the sauce to a blender or food processor and process until smooth.
Meanwhile season the chicken wings with salt, pepper, and drizzle with olive oil. Toss to ensure all wings are coated.
Place the wings into an air fryer on 400 for 15-20 minutes until wings are cooked through and skins are crispy. Alternatively you can bake them in the oven on 425 for 20-25 minutes.
Remove the wings from the air fryer and toss desired amount of plum sauce over the wings.
Sprinkle the coated wings with sesame seeds, green onions, and chiles.
Serve immediately.
Note: You can also serve the sauce on the side of the wings if desired.
